CHOCOLATE CREME CUPCAKESSSSS!!!!





anyone who knows me well knows that i ADORE cupcakes and baked goodies...but especially cupcakes! so needless to say, i was really super excited to find a vegan cupcake while visiting whole foods yesterday. and this was no whimpy cupcake, it was a large and in charge cupcake! its a hefty 4.5oz, though as a result, it packs a lot of calories for one serving (430), so for those of you who are a little more health conscious or looking to watch their weight, it might be something you have once in a while or share with a friend (which is what i did). the flavor, texture, and moistness were all on par with non-vegan baked goods, and it was almost undetectable that it had been made without milk or eggs. actually...really totally undetectable. the only "complaint" i have to register is that the creme filling was a little too sweet for my personal taste, but thats just me. at $2.99 a pop they could be considered a little pricey as far as a quick snack item, but its worth it knowing you're getting a high quality, vegan snack with all natural ingredients. do yourself a favor and get to whole foods and pick one (or ten!) up! you won't be dissapointed.

lets barbeque!







its been a while since i've posted...please excuse my winter hibernation! but i'm back at it now and have a yummy treat to share. i have found a new favorite, that being the new hickory BBQ riblets now available from morningstar farms. i love everything BBQ, but don't get to enjoy it much with meat being out of the picture. i was thrilled to find these at the grocery store and picked up a package to try them out and was not disappointed. the texture and taste were excellent, though the sauce was a little sweeter than i prefer, but not over bearingly so. there are two servings per box, and they can be prepared in the oven or the microwave. being that i never have much time to cook, i opted for the microwave; all you need is a little more than 3 minutes and you're set. they are easy to take and make also, just make sure to bring some extra napkins because there's A LOT of sauce! i enjoyed some for my lunch at work this past week and fortunately didn't spill any on myself! haha. and with spring and summer on their way, i'm definately looking forward to cooking some of these up along with some corn on the cobb and potato salad and other summer time goodies to enjoy outside with my friends. go BBQ!

another note on recipes

hi there. my former partner in this blog posted a little while back that we don't include recipes on this blog, and this is still the case. i of course welcome any recipes that anyone would like to share in the comment section, but there will not be recipes in the regular posts. i just wanted to clarify that as i am still getting questions about recipes. "why?" you may ask. the reason is simple, i started this blog because i live a very hectic and busy life, i go out of state often, and i work the graveyard shift. due to those factors, i unfortunately don't have much time to spend in the kitchen at all, but i still want to attempt to eat a somewhat healthy and totally veggie diet. knowing how frustrating it can be to find quick, easy, and good veggie/vegan eats, i decided that when i do find something good, i wanted to share it, and eat this! was born. this is not a blog for kitchen connoisseurs or aspiring vegan chefs. this is a blog for active, on-the-go people, nightshift workers, or anyone who just doesn't have the time to spend in the kitchen making luxurious veggie meals. so that being said, i will continue to be on the lookout for yummy snacks and treats, and places where an on-the-go veggie can get something hot and tasty, or cold and delicious, quickly and for a reasonable price. i also want to explore some of the "prepared" food options that are out there...microwaves can be gross, but it beats the alternative of going hungry or eating meat, and for some of us, a microwave is all we have available at our workplace to aid in food prep. and a note on snacks...i am not vegan myself, but do enjoy vegan food as much as i can (i'm sadly not disciplined enough to do it full time, though maybe 2009 will be the year!), and love vegan snacks and desserts. that being said, ALL SNACKS featured on this blog will be vegan...though they will range in the level of strictness (you know...oreos vs. carrot sticks. organic vs. not organic. haha). the restuarants and eateries will be both and dishes reviewed will be either veggie or vegan. hope that clarifies any questions anyone had, and i look forward to hearing suggestions from all the busy veggies out there!

hi there! I have NOT forgotten about this blog, just been really busy with work and life in general. i will be flying solo with this blog from now on, but i'm making sure to keep my eyes open for goodies, treats, and eateries, and in the new year will begin posting again. of course, any suggestions are welcome as always! just wanted to put something up so everyone knew Eat This! isn't going anywhere. haha. post again soon :) and happy (early) new year!

Recipes?

People have been asking a lot lately if we have recipes on this blog...the answer is no.
This blog is basically for people who are on the go and need a quick snack that doesn't take a lot of time to prepare...

...or this blog is for those who are snackaholics!

If anyone has any recipes that are quick and easy, and go along with the same type of theme as the post, then by all means...please leave it in the comments section.

A delicious vegan cookie. The vanilla ones are my favorite, but they also have chocolate on chocolate and chocolate with vanilla creme. They are all vegan and they are all amazing!

Something else that is amazing...you can use them for pie crust! Just mash up the cookies...add a little bit of vegan earth balance butter...spread in a pie pan...bake at 400 degrees for 10 minutes...then add whatever brings you pleasure.
I like to add fruit...then I bake for another 15-20 minutes. It's a quick and easy dessert.

vegan chocolate mousse!

i was feeling a little hungry today as i was driving home from spending the weekend in philadelphia and was hankering for a chocolately treat. i was passing through maple shade, nj and spotted a whole foods so i decided to pop in and grab a quick snack. i was walking by one of the fridges and behold! there it was before me, vegan chocolate mousse! though not vegan myself, i do love vegan desserts and was really excited to see one of my favorite things offered in a vegan option. i slapped down $4 and walked away with the yummy chocolately treat i had been craving. i was very pleased, and while the overall flavor was a little on the "soyish" side, which is something i'm not always a fan of for my personal taste, it wasn't overpowering (which is my complaint with some products) and on the whole, the mousse was quite tasty. it definately gets my seal of approval! next time you're at a whole foods, take a look in the dessert case and grab some for yourself and drop us a line on what you think!
